Pecorino Romano is a sheep's milk cheese mainly produced in Sardinia. One of Italy's oldest cheeses, Pecorino Romano was a staple in the diet for ancient Roman legionaries. Distinctively aromatic, pleasantly sharp and quite salty, Pecorino Romano is most often grated over pasta dishes with flavorful sauce. Pecorino Romano is aged at least five months so it is hard and very crumbly.
