Wischego is an award-winning Wisconsin sheep's milk cheese and the signature creation of Hidden Springs Creamery. This farmstead cheese is crafted from 100% sheep's milk, produced by ewes grazing on the lush, rolling hills of Westby, WI.
Inspired by the traditional Spanish Manchego, Wischego offers a "driftless region" terroir that is uniquely Midwestern. It has a rich, meaty flavor brightened by the notes of fermented fruit and salt. Its complex, buttery finish rivals its European cousins.
Hidden Springs Creamery is a farmstead creamery, meaning every cheese they make begins right on their farm - their sheep are born, raised, and nurtured on lush pastures.
