Raclette cheese is a mountain cheese made from raw cow's milk. Alpinage produces Raclette cheese, a favorite French and Swiss mountain cheese, right here in Wisconsin. Mount Raclette is produced using farm fresh milk, then aged in a cave-like cellar where the wheels are aged for a minimum of 60 days on natural wood boards. The washed rind is rough, hard, and dark beige in color. The paste is pale yellow with a flavor that is fruity, creamy and melt-in-your mouth good! When heated, this washed-rind cheese has a pungent aroma and strong flavor. Traditionally, Raclette cheese is melted and served over foods such as fingerling potatoes, cornichons, and cured meat.
