Watermelon Goat Cheese Salad
With summer almost in full swing, and Fourth of July just around the corner, this Watermelon Goat Cheese Salad is the perfect dish that is simple, delicious, fresh, and healthy. This dish comes together in less than 20 minutes and is the perfect sidekick to your next cookout.
Ingredients

8 cups watermelon, cubed (approximately 3/4 inch)
- 2 cups fresh blueberries
- 6oz goat cheese or Feta cheese, crumbled (approximately 1 cup of crumbles)
- Mint and basil leaves, chopped
- Juice of 1 lime
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey
- Salt, to taste
Instructions
1. Prepare your honey lime dressing by combining all ingredients and mix well until well combined. Tip: add to a mason jar and shake well to combine! |
2. In a large serving bowl, combine watermelon, blueberries, mint & basil (to taste), and 3/4 cup crumbled goat cheese. Toss with honey lime dressing. |
3. Top with the remaining 1/4 cup of goat cheese and garnish with mint and basil leaves. |
4. Serve immediately and enjoy! |
Tips
- To make crumbling your goat cheese easier, remove from packaging, place on place in freezer for about 15 minutes, then crumble with a fork.
- Try with one of our flavored goat cheeses for an extra kick of flavor! Also wonderful with Feta cheese.
