Crafted by Ron and Josie Henningfeld at Hill Valley Dairy, Luna is an artisanal "Wisconsin Original" that sits perfectly at the intersection of two classic styles. By blending the nutty, savory characteristics of a Swiss-style Alpine cheese with the creamy, caramelized sweetness of a Gouda, Hill Valley has created a complex profile that defies traditional categories.
Luna is cave-aged to develop a rustic, natural rind and a dense, golden interior. This careful aging process in the Hill Valley caves allows the cheese to absorb a unique earthiness, resulting in a sophisticated wedge that evolves on the palate with every bite.
